Home cooking: chicken tocino/tocilog

Breakfast for dinner is something I wish I did more often as I rarely eat anything heavy before noon. With recent disruptions of both sleeping and eating habits, I was craving for some sort of -silog (tapsilog, SPAMsilog, longsilog) for dinner. With some boneless, skinless chicken quarters in the freezer, I did a quick marinade for chicken tocino. The quick marinade consisted of freshly squeezed orange juice, soy sauce, brown sugar, and a touch of vinegar. I let it marinde for an hour. While the wild rice was cooking, I placed the chicken in a frying pan with a cup of water. I allowed the water to boil until it evaporates, then cooked the chicken until it was caramelized. Lastly, I placed an egg done sunny-side up to complete my breakfast for dinner.
